Staying Healthy During Quarantine

On my runs to the supermarket these past couple of weeks, I bought a few cans of dry goods and a lot of processed foods. I could feel my stomach expanding regardless if I ate these items or not. However, I wanted to still maintain some sort of normalcy in my food intake and have been pretty good with sticking to veggies and eggs in the morning. I also figured out a way to prolong the life of my veggies by placing them into ziplock bags and adding in paper towels to capture any buildup of moisture in the bags. If I need to, I would replace the paper towels every few days.

Salad and Egg Recipe for Breakfast/Lunch

  1. Half or a Whole Avocado
  2. Handful of Spinach
  3. Handful of Baby Kale
  4. Handful of Arugula
  5. 1 to 2 teaspoon of Green Sauce
  6. 2 Scrambled Eggs
  7. Salt and Pepper
  8. Smoked Salmon (optional)
